Oysterfest, as you might guess, is all about oysters. Smoked oysters, oyster po’boys, oysters on the half shell and many others. If you like oysters, it’s a great event to attend. We were thrilled to provide Austin event photography for it to show case some of the great dishes.
Eating oysters is all about the process. And for most dishes there is no escaping the fundamental nature of an oyster. There is something great about watching a skilled chef shuck an oyster or watching large mounds of shells build up.
Raw oysters and Tabasco sauce are a pretty normal combination. The chefs at Oysterfest didn’t leave it at that and there were lots of other more adventurous options available. I particularly liked the atomic horseradish sauce.
Some of the dishes at Oysterfest were quite simple (which doesn’t mean they aren’t great) such as variations of raw and smoked oysters on the half shell. Others are more elaborate. The shell isn’t present, but they are still quintessentially oysters.
If raw oysters aren’t your thing, there were plenty of other options. With large crowds, mountains of fried oyster po’boys were a no-brainier.

We photographed this even on behalf of Primizie Catering to help document and showcase their creations for the event. Oysterfest included a large number of chefs, all creating their own versions of classic oyster dishes, as well as their own oyster based creations.
